We are in the process of building out a butcher shop and farm stand in Cedar Crest, and hope to be fully operational by summer 2020. The kitchen/processing space is coming along, our licenses are all in order, and we have USDA inspected meat available for sale at the butcher shop. We will be opening up every Friday from 12-6 and inviting other farmers and food producers to join us for an informal winter market. During the build out we will be posting a sign on North 14 whenever we are around, so feel free to stop in and see us.
While our main focus is on developing the capacity to process our own animals in house, we are also sourcing animals from other local farmers and ranchers and hope to be able to offer the community access to local beef, pork, lamb, and poultry, as well as local produce and dairy. We are deeply dedicated to working with and supporting other producers that value good land stewardship and are working to improve soil health as well as community health. We are excited to be offering grass finished beef from Peculiar Farms in Los Lunas, range fed lamb from the Perez ranch in Torrance County, pasture raised pork from the Valdez ranch in Conejos beginning in December. Currently we also have in stock milk, cheese curds and yogurt from De Smet Dairy, produce grown by friends both in the valley and here on the mountain, Edgewood Honey.
We are working on expanding our laying hen flock but are also very interested in sourcing eggs from local producers. Please contact us if interested. No amount too small. And if you are a local producer looking for a retail outlet, we are currently buying wholesale, offering consignment, and inviting people to come down to the shop and sell direct on Fridays from 12-6pm.
